"Hilltop Salad" with Panko Crusted Chicken


"Hilltop Salad" with Panko Crusted Chicken
(serves 1)

Ingredients:
1 breast of chicken
Dijon mustard
1/4 cup panko bread crumbs
1 teaspoon dried parsley
salt
pepper
1 cup romaine lettuce, chopped
2 tablespoons dried cranberries
blue cheese, crumbled
1 tablespoon walnuts, chopped

Directions:
1. Preheat oven to 350 degrees.
2. Trim chicken of all fat. Rinse, and pat dry.
3. In a small, shallow bowl, mix panko bread crumbs, parsley, salt, and pepper. Brush outside of chicken with dijon mustard. Coat both sides with bread crumb mixture. Place on baking sheet and cook for 15 minutes.
4. Meanwhile, mix romaine lettuce, cranberries, blue cheese, and walnuts. Set aside.
5. Remove chicken from oven once thoroughly cooked. Slice, and place on top of lettuce mixture.
6. Top with your favorite dressing and enjoy!
