Spinach and Artichoke Dip
(serves 6)
Ingredients:
1 cup mayo (I used fat free)
1 cup Parmesan cheese, shredded
1 can artichoke hearts, drained and chopped
1 pkg frozen spinach, thawed and drained
salt and pepper to taste
Directions:
1. Combine all ingredients in a mixing bowl and transfer to a small baking dish.
2. Broil for 5 minutes, stir, and then broil for another 5 minutes.
3. Stir, and serve with pita/tortilla chips.
